We are primarily a porridge family.
Most mornings, my Thermomix is whirring away, cooking porridge for four.
But come summer, I do love changing it up and making this Thermomix bircher muesli…or cold porridge as Charlie calls it.
This recipe is really adaptable.
You can really throw in whatever you happen to have on hand…as the title of this post says, anything goes.
2 pieces of fruit, roughly chopped
I generally use one apple and a piece of whatever else happens to be in the fruit bowl…this recipe is perfect for using up those apples that kids one bite out of and then abandon.
1/2 cup nuts
Almonds, walnuts, I made it with pecans once.
150 grams rolled oats
425 ml milk
You can use whatever type of milk you like or a combination of milk and juice.
375 grams plain or Greek yogurt
2 tablespoons honey
sprinkle of cinnamon
And whatever else you want to add…sultanas, chia seeds, linseeds, sunflower seeds.
Put the roughly chopped pieces of fruit and nuts into the Thermomix.
Turbo until everything is finely chopped.
Add the rolled oats, milk, yogurt, honey, cinnamon, and whatever else you like.
Mix for 15 seconds / reverse / speed 4.
Pour into an airtight container and refrigerate over night.
It will seem very liquid-y but it thickens up as the oats absorb the milk.
In the morning, eat it as is or add some stewed fruit, fresh fruit, or even frozen fruit.
Here I had it with some raspberry sauce, a dash of cream, and a sprinkle of cinnamon.
Enjoy!
