Pumpkin Spice Latte

Pumpkin Spice Latte

As it is autumn in the States, my personal Facebook feed is full of all things fall.
Apple picking, jack-o-latern carving, cider donut eating, maple sugar candy making, and of course pumpkin spice anything and everything.
Last time I made the trek to America, a can of pumpkin puree came back to Australia with me.
As I only had one can I ummed and ahhed about what to make with it…pumpkin pie, pumpkin cheesecake bars, pumpkin sugar cookies, pumpkin french toast.
I ended up making pumpkin read more

60 Days Of Thermomix: Steamed Pork Dumplings

Is there anything better than a dumpling?
Even just saying the word dumpling makes my mouth water.

My ultimate dumpling is the soup dumpling from Joe’s Shanghai in Chinatown in New York.
An explosion of hot broth followed by a pork meatball that has been steamed to perfection.
So very good.

Now I feel like a big tease because while these dumplings are good…they are not nearly as good as those at Joe’s Shanghai.
But since Joe’s Shanghai is half way around the world, these are a decent option.

60 Days Of Thermomix: Eggplant Spaghetti “Bolognese”

This is a hearty and delicious vegetarian take on pasta bolognese.
I use my Thermomix to make this but you could just as easily make it on a stovetop.
Either way, you should add it to the rotation at least once while the weather is still right for warming and filling meals.

Eggplant Spaghetti “Bolognese”

60 grams of parmesan cheese, cut into chunks
50 grams of pine nuts
2 cloves of garlic
2 red chillies…or 1 or none
50 grams of olive oil
500 grams of eggplant, about 2 medium read more

60 Days of Thermomix: Baked Beans

Having only ever sampled the canned variety, I used to hate baked beans.
The taste, the texture…both unpleasant.
I was hesitant to try to make homemade baked beans…I honestly thought the tinned variety were so vile that the entire concept of baked beans was almost ruined for me.
But then I came across Quirky Cooking’s recipe…beans, bacon, crushed tomatoes, molasses…you just can’t go wrong with those ingredients!
Every time I make these…which is about once a week now…both R and I exclaim that they are read more

60 Days of Thermomix: Magnolia Bakery Banana Pudding

Processed with VSCOcam with c1 preset

It has now been about two months since I have been without a stove and oven.
And without hot water in the kitchen.
And without a dishwasher.
While it can’t help with the latter two issues, the Thermomix has been my cooking saviour.
The past two months have actually been a great test of the Thermomix.
A test which it has passed with flying colours!

I thought I would post a few of the recipes I have been cooking over the past two months…ones that have become a part of the read more
