Thermomix Rocky Road

What do you do when you have been on night duty, you have already let your toddler watch too much TV, you are looking for a way to pass the hours until bed time, and you find that you have a pantry full of baking odds and ends?
Make rocky road!

I made this in my Thermomix but you could just as easily melt the chocolate on your stove or even in your microwave and then simply stir in whatever goodies you choose to use.

Tired Mom Pantry Clean Out Rocky Road

500 grams chocolate
20 grams coconut oil
100 grams of marshmallows
500 grams of other tasty treats…we used dried apricots, dried cranberries, raw cashews, crystallised ginger, and coconut

Put roughly chopped chocolate into Thermomix bowl.
Grate chocolate – 10 seconds, speed 9.
Add 20 grams coconut oil.
Melt chocolate and coconut oil – 50 degrees, 5 minutes, speed 1.
Scrape down the side of the bowl.
Add marshmallows and other bits.
Combine – 50 degrees, 1 minute, reverse, speed 1.
Scrape out onto a lined baking tray.
Give spatula to toddler.
Explain the concepts of waiting and patience to your toddler as the rocky road sets in the fridge.
Loose temper when toddler repeatedly opens the fridge door to check on the rocky road.
Distract toddler by making mud and playing with diggers in the front yard.
Finally, once toddler is sound asleep in bed, enjoy a solo piece of rocky road.

  • I was going to make rocky road. But then over tiredness, flu and period, I just sat down here and read blogs and ate all of the ingredients. Just put a bit of everything in my mouth at once and it kinda tasted like rocky road.
